Sacramento's, Tinoco's Mexican food makes delicious farm raised mutton barbacoa.
We follow a recipe that has been passed down generations from a small village in Mexico. We hand built a traditional brick oven where we place premium mutton in. Cover with cooked American agave leaves to give the mutton a specific taste and aroma. Leaving it to cook overnight makes the tough mutton meat to fully break down to have soft, juicy, and flavorful meat. Seasoned with salt and pepper.
Paired with your choice of either corn tortillas or flour tortillas.
